RTEs ‘Neven Maguire: Home Chef’ Visits Trinity College Dublin

Trinity’s busy catering department featured in this week’s RTE television series ‘Neven Maguire: Home Chef’. Neven visited Trinity to experience a Commons dinner, and meet with Catering Manager, Moira O’Brien, and Head Chef, Kieran Maxwell, to learn about the preparation involved in dishes served daily to staff, students and visitors to Trinity.

“The catering team operate several restaurants and coffee shops across campus along with the 1592 Restaurant, which is our fine dining restaurant, Commons and also a very busy banqueting service,” explained Catering Manager, Moira O’Brien. “We have a wonderful team of 62 staff and have about 4000 transactions per day across all our restaurants. There is a very diverse mix of customers and the department works hard to adapt to their ever changing demands. We find that customers are moving towards more ethnically based dishes, healthier options and are increasingly aware of allergens in foods so we develop our menu choices around this”
