Healthy Eating on Campus with Trinity Catering

Trinity Catering have put together the menu below of healthy foods for Health & Sports Week.

They've also worked with BESS students Lauren Healy and Grace Nash on an initiative to remove confectionary from the tills all week. Lauren and Grace are on a mission to get us all eating more healthily. Check out their instagram accounts set up as part of their Capstone Grand Challenge: Eat Five a Day and TasteInTen

Monday

Vegan soup of the day
Cajun Salmon, tomato and fresh coriander salsa
Roast loin of pork, fresh herb stuffing, apple sauce
Pasta Bolognaise served with garlic bread
Vegan and vegetarian Vegetable chilli served with tortilla chips
Green beans
Parsley boiled potatoes
Mixed berry oat crumble, low fat custard

Tuesday

Vegan soup of the day
Grilled marinated chicken in rosemary and lemon, basil pesto
Roast turkey crown, cranberry sauce
Hungarian beef goulash with red peppers, diced potatoes and baby onions
Vegan and vegetarian - Stir- fry vegetables served with steamed rice
Broccoli
Champ potatoes
Apricot bake with mixed seeds, low fat custard 

Wednesday

Vegan soup of the day
Baked cod, couscous and sundried tomato crust, lemon wedge
Roast sirloin of beef, horseradish sauce
Thai coconut chicken curry served with steamed rice
Vegan and vegetarian – Falafels served with spicy chickpeas and natural yogurt with fresh mint
Fresh carrots
Roast potatoes
Olive oil apple and cinnamon sponge, Low fat custard

Thursday

Vegan soup of the day
Steamed chicken supreme, tomato and chorizo sauce
Corned beef, parsley sauce
Lamb curry with chickpea and butternut, steamed rice
Vegan and vegetarian Vegetable wrap with mixed leaves 
Mixed vegetables
Olive oil and leek mashed potatoes
Raspberry and Vanilla low fat sponge, almond milk custard

Friday

Vegan soup of the day
Grilled pork cutlet with hoi sin stir fried vegetables
Paella
Battered smoked cod, lemon wedge and tartar sauce
Vegan and vegetarian Thai red vegetable curry with steamed rice
Mushy peas
Sweetcorn and mixed peppers
Rosemary roast baby potatoes
Spiced pear and granola style crumble, soy milk custard
